Easy Cook: Pico de Gallo

Let’s make “Pico de Gallo” to go along with the Shrimp Quesadilla recipe which I posted last week. Pico de Gallo is a spicy and pungent salsa which extends the flavors of summer. I love fresh, ripe tomatoes but it is difficult to find flavorful tomatoes when they are out of season. This recipe seems to make the best of tomatoes in the wintertime. Plus the recipe uses lots of cilantro — which is plentiful at this time of year — and  growing in my garden now. Continue reading

Sour Grapes for Super Bowl Sunday

Sour Grapes. Guess who is not going to the Super Bowl Championship game this year? The New Orleans Saints football team and fans. This includes our family who managed to watch over 50% of the Saint’s games this fall including several exciting wins. To commemorate the loss, I am posting two “sour grapes” recipes this week. Aunt Gaye’s Eggplant Caponata

Everybody raves about Aunt Gaye’s Eggplant Caponata. It’s another great recipe for eggplant which includes lots of garden fresh vegetables. These are all chopped up and baked in a simple red wine vinegar and olive oil marinade. The flavors meld together in just the right blend. It’s difficult to stop eating this appetizer.
