French Dip “Sliders” Au Jus in the Instant Pot

One of my favorite sandwiches of all times is a French Dip Po-Boy. This sandwich is made with tender roast beef, sautéed onions and melted cheese. Flavorful beef broth or “au jus” is served for dipping the crusty French bread sandwich. You can’t find a better po-boy that this one. It has been awhile since I’ve made these sandwiches, but I’m in the spirit. Plus, it is football season – again – and these sandwiches make an easy game day meal. Just “grap and go.” I “downsized” the sandwiches by using small pistolette rolls to make “sliders” rather than large po-boys.

Southern Baked Beans with the Instant Pot

I have vague dreams (or nightmares) of celebrity chefs visiting on late night talk shows and cooking an entire meal using four Instant Pots. Now, where in my kitchen can I put four Instant Pots to cook at the same time and still have counter space to prep the ingredients? I think these television shows were aired prior to or during the Covid pandemic. I guess my vision will remain a memory as I hear from the media that the original Instant Pot company has filed for bankruptcy. Not that it matters. If we all take care of our four Instant Pots, we will be cooking in them for many years to come. I still use my one and only Instant Pot from time to time for several select dishes such as this delicious “Southern Baked Beans” recipe.

It’s a Wrap — Kale and Chicken Burritos with Instant Pot Sous Vide

Do you want to add some kale to your diet? We all know that kale is full of nutritonal value, but how do you incorporate it into meals. These “Kale and Chicken Burrito Wraps” are absoutely delicious and make a very tasty and nutritious way to accomplish this goal. My chicken breast is tender because I used an Instant Pot set on Sous Vide mode to cook the lean breasts. I added a tangy dressing to the kale which, actually, makes a pretty good salad by itself. This burrito wrap makes a healthy and tasty lunch. I could eat this every day.

Steen’s Cane Syrup Whole Wheat Rolls

Today, I’m making “Whole Wheat Rolls” using my Instant Pot. These flavorful rolls have a hint of molasses flavor due to the Louisiana Steen’s Cane Syrup which I added. What does an Instant Pot have to do with making yeast rolls? One of the most difficult steps in baking breads, in my opinion, is finding a warm spot in my kitchen which is just right for the dough to rise. Too hot, and the dough is hard as a rock. Too cold, the dough never rises. I’ve had so many flops. I was excited to learn that my new Instant Pot has two modes — Yogurt and Sous Vide — which can be used for the first dough proofing step. I’m experimenting today. I am using a food processor for mixing and kneading the dough, so this recipe is super simple.

Instant Pot Magic: Sirloin Steak, Tomato and Cabbage Soup

Blackeye peas and braised cabbage are two foods which are typically eaten on New Year’s Day here in Louisiana. My dear Cajun next door neighbor — who was just a little suspicious — always made sure we had these foods as they represent good luck and wealth for the new year. Most grocery stores have deep cardboard containers of cabbage for sale in late December. I found a few remaining very large heads of cabbage in January. I love cabbage; who can pass up a nine-pound cabbage for 55 cents? But they need to be cooked soon as the Vitamin C in the cabbage decreases over time. And so I made several dishes with this cabbage. My favorite was a savory soup made in my Instant Pot containing very lean top sirloin steak, beef broth, cabbage and diced tomatoes. I just love this combination of ingredients.

Instant Pot Magic: Let’s Cook Dried White Beans & Smoked Cajun Tasso

I love my Instant Pot for many reasons. One is speed. Some foods, such as dried beans, cook much faster when using the pressure setting on an Instant Pot. Now I can cook healthy dried beans in a reasonable amount of time (rather than all day). Although there are differences between types of beans, I have developed a “template” recipe for cooking white beans –Navy, Great Northern, cannellini or lima beans. This is a one-pot recipe; everything is done in the Instant Pot. No need to soak the beans overnight. The Instant Pot does that function. Then add seasonings, smoked Cajun Tasso or other smoked meat, the soaked beans and let the Instant Pot finish the job. No need to keep checking on the beans as the Instant Pot regulates the temperature and keeps track of the cooking time. In addition to being a tasty meal, dried beans are full of healthy fiber and other nutritional benefits. So, let’s start the New Year with some healthy dried beans cooked in an Instant Pot. Here is a bowl of white beans and ham (made with Navy beans).

Instant Pot Magic: Spaghetti with Diced Tomato & Meat Sauce

For me, the joy of an “Instant Pot” is all about the challenge. I am starting out the New Year with another of my “Instant Pot” experiments. Can you cook spaghetti with diced tomato & meat sauce in an Instant Pot? Although cooking pasta on the stove in one pot and meat sauce in another pot really isn’t difficult, an Instant Pot does save several steps and it reduces the number of pots that you have to wash. (And that is so important.) Plus, homemade spaghetti sauce tastes better than any commercial one, in my opinion, and it is easy to make. As an added benefit, the homemade sauce can be made so that it is not high in sodium (salt). Spaghetti with meat sauce has always been one of our favorite “go to” suppers. With a “never give up” approach; I made this simple recipe over and over in an Instant Pot trying to get the process perfected.

Instant Pot Magic: Old-Fashioned Oatmeal with Fresh Blueberries

As far as I’m concerned, an “Instant Pot” might also be called an “Impatient Pot.” For the person who likes to cook everything on the “high” burner of the stove, then an “Instant Pot” is the perfect kitchen appliance. Get the “Instant Pot” settings programmed and hit “Start.” Then leave the appliance alone and go on to another task. It doesn’t matter, as the “Instant Pot” regulates the temperature and pressure automatically. The recipe finishes cooking and the “Instant Pot” turns off. Yeah! No more burnt pots. I’ve tried cooking a variety of dishes in my brand new “Instant Pot.” And to the doubters who questioned if you could cook oatmeal in an Instant Pot, today I’m giving it a try.

Instant Pot Magic: Coconut Curry Chicken with Potatoes & Carrots

Can you cook oriental cuisine in an Instant Pot? I decided to find out by cooking “Coconut Curry Chicken with Potatoes & Carrots” in my new kitchen appliance. And I was pleased with the results of my “Americanized” dish. The flavors of coconut milk, yellow curry and chicken combine to make a nicely seasoned main dish. The recipe comes from a college roommate and is one of my favorite oriental-inspired dishes. Typically potatoes are included in this recipe. My roommate, Lucy, also added carrots and onions. Serve the chicken with rice — even though it contains potatoes. Had I known that cooking with an Instant Pot was so incredibly easy, I might have purchased this kitchen appliance several years ago.

Instant Pot Magic: Let’s Steam a Whole Artichoke

Here’s something that I never ate until I was an adult. That is a fresh, whole artichoke. My husband’s family loves to eat this vegetable — just for the fun of it. It is a social activity — sort of like a Louisiana crawfish boil. My mother-in-law boils the artichokes in a pressure cooker until tender. To eat them, you pluck off individual leaves, dip them in butter — or garlic butter. — and pull the pulp off the leaf between your teeth. You also eat the artichoke heart — that’s the best part. When my husband brought some colossal artichokes home from the grocery store, we decided to try cooking them in my new Instant Pot. So simple and the artichokes cook much quicker than boiling on a stove. In addition to enjoying the wonderful flavor of the artichokes, we learned that they are a powerhouse of nutritional value.
