Every now and then, it’s nice to have such a quick and simple supper entrée to prepare, that you can almost make it in your sleep. This “melt-in-your-mouth” baked catfish recipe is very easy to cook and it is also very tasty. There is no chopping, dicing, stirring or mixing involved. It is a great recipe to fix when I arrive home from work, exhausted, but still want a home-cooked supper. I have several of these “simple” catfish recipes. Easy Cook: Fresh Peach Cockaigne

Yes, fresh peaches are here. I look forward to finding peaches in grocery stores in the summertime; this is one of my favorite fruits. The aroma and flavor of a fresh peach just can’t be beat. My recipe for “Fresh Peach Cockaigne” or “A Small Up-Side-Down Peach Cake” is a great way to highlight the aroma of ripe peaches. The recipe is a “one bowl” dessert — it takes just a few minutes to mix it up. My recipe is not too sweet, which makes a refreshing change from many cobbler recipes. And I prefer the flavor and texture of fresh peaches compared to canned ones in the recipe.

Let’s Eat Pumpkin! Cajun-Inspired Roast Pumpkin Slices

Who would think that we might be eating roast pumpkin and liking it. Small sugar pumpkins which are available in grocery stores in autumn are really quite tasty when simply roasted. Once I discovered how much I liked the pumpkins, I’ve continued to purchase them. I added Cajun-type spices which made these very flavorful.

I confess that I have many favorite homemade ice cream flavors; my most favorite flavor is peach ice cream. The summertime with ripe, juicy peaches is the perfect time to make this ice cream. Here is a recipe for peach ice cream that literally takes less than 10 minutes to mix up. You just need 4 ingredients, a wire whip and an ice cream churner. How simple can that be? And this ice creams is smooth and really quite delicious. It is much lower in fat and calories than commercial ice cream. You will surely impress family and friends.

Teen Chef: Let’s Bake Mardi Gras King Cake Broiches

It’s Mardi Gras season in Louisiana and today we’re making King Cakes. This year I have teenager, Jessi, to help me make these sweet, rich and delicious yeast breads known as King Cakes. King cakes fill the grocery stores and hundreds are sold in New Orleans during the Mardi Gras season. It is fairly easy to make a king cake yourself at home using this recipe. The key is using a heavy-duty mixer to do the kneading.
