    1. Yes. Junior’s always uses a sponge cake for their New York Cheesecake crusts. I didn’t think that crust would be a good fit for an Instant Pot. Plus, it requires alot of steps (not my idea of making a cheesecake experiment). If I were to change one thing, it would be the crust. Perhaps, a pecan, almond or other nut crust might work and I’ll try the sponge cake crust for a cheesecake baked in the oven.
