  1. These sound like a flavor explosion! I loved the story about being deep in the bayou and your co-worker bringing the Boudin balls back to work!

    1. These boudin balls are very flavorful! In general, however, the sausage isn’t really spicy, so you need to add it to the breading to get some kick. Yes, this was a unique job! (I’ve had sseveral.) I’ll always think of Charlie every time I go to the St. Francisville area!

    1. Hello; Yes, you should be able to bake these — although I haven’t tried it. However, the breading does contain an egg wash and I’m not sure how that would bake. Perhaps, I’d suggest using only one egg in the eggwash — not two and spraying the boudin balls with Pam prior to frying so that they crisp up in the oven while baking.
