Tucked away in the middle of Baton Rouge is a pizza parlor which serves a very unique style of pizza.. It closed temporarily during the beginning of the Covid-19 pandemic. With a sigh of relief, the restaurant opened again last summer. For years, Fleur De Lis Cocktail Lounge has been a favorite late night gathering spot for an eclectic assortment of people as well as local sports teams celebrating afternoon games. The restaurant serves a distinctive square, thin crust pizza termed “Roman pizza.” You either like this style of pizza and become addicted to it or never return for another slice. Here is my second crawfish recipe for this spring during the peak of the Louisiana crawfish harvest. I don’t think that I would have considered making macaroni and cheese with crawfish but a local magazine featured this dish. Wow, this baked version is pretty good. Although I was skeptical at first about adding seafood to macaroni and cheese, the flavors blend nicely. The recipe uses penne pasta baked in a creamy cheese sauce and topped with Italian bread crumbs. Yum. Since crawfish tails are so, so expensive, I made several “trial runs” of the recipe using peeled shrimp. These turned out great, too. Here is a shrimp variation.Continue reading

Before you say “yuk” to broccoli soup, try this recipe. The flavors of broccoli, cheese, onions and carrots blend together with a creamy texture to make a mellow and flavorful soup. This might be my best zucchini recipe of the summer, “Zucchini Lasagna.” When I queried my family on suggestions for using the giant, one-pound zucchini growing in my backyard garden, my son mentioned this recipe. And it is wonderful! Thin slices of the huge zucchini replace the lasagna noodles. Layer on a rich tomato sauce with the zucchini slices and mozzarella cheese and the result is a vegetarian “meal-in-one.” Plus, a layer of ricotta cheese, eggs and Parmesan cheese add a creamy filling — sort of a “surprise” in the recipe.
“Shrimp Quesadillas” is quickly becoming one of our favorite supper dishes. They also make a great appetizer for a party such as an upcoming Superbowl football game gathering. We’re going to the national championship playoff game on Monday at the New Orleans’ Superdome. LSU vs. Clemson. To commemorate the successful year of LSU Tiger football, I’m going to make the signature dish of Louie’s Cafe — hash browns. This small diner is located next to LSU’s campus and is a favorite eating place of LSU students Louie’s hash browns are both unique and delicious. Here we go. This is my copycat attempt.
