Let’s Eat Pumpkin

Now is the time to enjoy cooking and eating all those pumpkins which have popped up in markets in autumn. Pumpkin is so nutritious, full of vitamins and fiber. And pumpkin tastes mighty good. I suggest purchasing smaller pumpkins intended for cooking. For fresh pumpkin pulp, cut the pumpkin into halves or quarters, scrape out the seeds, pierce the skin and then roast cut side down in an oven until tender. Lots of nutritious pumpkin pulp to use in cooking. Here are some of my favorite pumpkin recipes.
